Honey Soy Marinated Tilapia

What is Tilapia anyway?

Ingredients
2 Tilapia Filets (works well with mahi mahi also)
3 T Honey
3 T Soy Sauce
3T Balsamic Vinegar
1 Clove Garlic minced

 Directions
Preheat oven to 350.

Mix last four ingredients in a shallow dish. Add fish filets, and let marinade in fridge for at least 20 min. Bake in preheated oven for 15-20 minutes, or until fish flakes.

Honey Grilled Scallops

Serves 4    Hot  Seafood  Hors d’oeuvre  Starter  Appetizer  Dairy free  Eggless

 Ingredients
12 Scallops, prepared and washed
2 tbsp Lime Juice
1 tbsp Vegetable Oil
1 tbsp Honey
1 tbsp Soy Sauce
1 teasp finely grated Root Ginger

Salad leaves to serve

Instructions
1. Place the  lime juice, oil, honey, soy sauce and ginger in a bowl and mix well.

 2. Add the scallops, toss to coat thoroughly then cover and refrigerate 1 hour, mixing occasionally.

3. Preheat the grill to hot. Remove the scallops from the bowl reserving marinade and place in a foil lined grill pan which has been lightly oiled. 

 4. Grill for 3-4 minutes then turn and baste with reserved marinade and continue grilling for a further 3-4 minutes or until opaque throughout.  Serve immediately on a bed of salad leaves.

Basil Grilled Shrimp

  • 3 cloves garlic, minced
  • 1/3 cup olive oil
  • 1/4 cup tomato sauce (I ran out of T sauce one night and substituted ketchup, worked great and added a bit of tang)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 pounds fresh shrimp, peeled and deveined
  • skewers

DIRECTIONS

  1. In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
  2. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  3. Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
