Susan’s Baked Eggs

1 package Jimmy Dean sausage, cooked drained, & crumbled; 41/2-6 cups cubed bread; 2 cups shredded sharp cheddar cheese; 10 eggs; 4 cups milk; 1teaspoons dry mustard; 1 teaspoons salt; 1/4 teaspoons onion powder; 1/2 cup sliced mushrooms; i/2 cup peeled chopped tomatoes; pepper to taste:

Place bread cubes in 9×13 buttered baking dish; sprinkle with cheese; combine next 6 ingredients & pour over bread & cheese; sprinkle sausage & mushrooms & tomatoes over the top; cover & chill over night;pre-heat oven to 325; bake uncovered 1 hour; cover with foil if top browns too fast. Serves 6-8

Grandma’s Scrumptious Waffles

This recipe was taken from an old hand written card that was barley
legible.

  • 2 cups good biscuit mix
  • 1 egg
  • 1 1/3 cups club soda
  • 1/2 cup oil

You can also use a boxed pancake mix + substitute the soda for milk.
 Makes them so light and fluffy you have to practically hold
them down on your plate.  But this batter can not be saved.

So when you are finished eating cook up the rest of the batter and
freeze them.  Then pop them in to your toaster later.
 Even better second time around.
